Below you will find a recipe to make coconut yogurt with just three ingredients. Enjoy!
Tools you will need:
1 LB Organic Coconut Meat (defrosted)
1 can Organic Coconut Milk
1 tsp probiotics(2 capsules)
1)Put all ingredients into a blender for 2-3 min on high speed.
Once all ingredients are in the blender, blend on high. You want the consistency to be smooth and fluffy because you don't want to blend the yogurt again once it's fermented. For transferring the yogurt to the glass jars, use only a wood spoon or a silicone spatula.
2) Pour the yogurt into glass jars with an inch space left at the top.
Keep yogurt at room temperature for 1-3 days. After fermentation, you can keep the yogurt in the refrigerator for up to a month.
To flavor the yogurt you can add fresh or dried fruit, honey, coconut flakes, nuts or seeds, or anything you desire.
4) Yogurt Starter or “Mother”
You can make a second batch of yogurt by following the instructions above, or you can omit the probiotics and use a few tablespoons of the yogurt you have in the fridge.
